We slice the zucchini into rounds or strips, depending on what we prefer.
We heat a pan over medium heat and we add a small amount of olive oil if necessary.
We add the zucchini slices to the pan and sauté until they are tender but still have a slight crunch.
Once the zucchini is cooked, we pour the tahini sauce over them in the pan.
We stir gently to coat the zucchini evenly with the tahini sauce.
We season with salt and pepper.
If we want, we can garnish with chopped fresh parsley and sesame seeds.
We transfer the zucchini with tahini to a serving dish and serve warm.
For the Tahini Sauce:
In a bowl, we add the tahini, lemon juice, minced garlic, and olive oil.
We whisk the ingredients until we have a smooth and creamy tahini sauce.
If we want we can accompany our zucchini with qnother sauce like grarlic sauce or taramosalata.
