Vegetables of all kinds are an integral part of monks daily diet. See bellow an easy and oil-free monastic recipe with mixed vegetables baked in the oven in a roaster pan. A dish from Mount Athos for the days we abstain from olive oil, which will supply us with nutrients and help us continue the struggle of self-restraint.

Ingredients
Execution Method

We wash the vegetables, clean them and cut them into pieces.

We put them in a clay roaster pan and season well with salt and pepper.

We add the lemon juice and mix.

We bake for about an hour in a strong oven, with the lid closed.

In the last 5-10 minutes we open the lid to brown the food.

Tips

We do not add any water because the vegetables will take out enough moisture.
