Stuffed mushrooms with cheese
The monks recipe is full of mushroom dishes, as they can be a worthy substitute for legumes, since they are very rich in proteins. In fact, in some monasteries such as Filotheou, Dochiariou and Esfigmenou, white mushrooms and oyster are cultivated. Try the monastery recipe bellow and make the most delicious stuffed white mushrooms with cheese and cream. A nice appetizer for days when we consume dairy products.
We remove the stems from the mushrooms and grate them.
We put the olive oil in a pan and saute the green onions and the mushroom stems.
We add the cream, the cheese to the pan and mix.
We season with salt and pepper, add the parsley and remove the pan from the heat.
We stuffed mushrooms with the filling and pour some grated kefalotyri on top.
We bake in a preheated oven at 180 degrees for about half an hour.
We never wash the mushrooms because they absorb moisture and "water" the food.
If we want, clean them slightly with a wet paper towel.
