Stuffed Florinis peppers (Greek red peppers)
Fresh peppers, which are abundant in the summer, are used very often in the monastery recipe. One such dish is the stuffed Florinis peppers with feta cheese and eggs, baked in the oven. We wash the peppers, remove the seeds and nerves and drain them.
We fry them lightly in a little olive oil.
We beat eggs in a bowl and add the mashed tomatoes.
We pour the feta into the bowl and mix well to homogenize the filling.
We stuffed the peppers with the mixture and place them in a pan.
We bake them in a preheated oven at 180 degrees for about half an hour.
