Pickles in a jar
Pickles in a jar is an easy and useful food that anyone can make. It is an easy solution for when we want to enrich our salad or some other food. At the same time, it is nutritious and filling. That's why the orthodox monks make it during the fasting period. Try this recipe from Mount Athos for times of need.
We wash our vegetables well and cut them into thick pieces.
We boil water in a pot.
After the water boils, we blanch the vegetables for about 3 minutes.
At the same time, we have sterilized the jar we will use.
When the vegetables are ready, we put them in the jar.
We add the water in which we boiled the vegetables to the jar, until they are covered.
We season with salt and pepper.
We let them cool and drain the jar.
The pickles can be eaten after two days.
We can use whatever vegetables we want.
When we serve it, we can add a little olive oil.
