Oven-roasted potatoes with mushrooms is a recipe that we often consume here in Mount Athos. This Greek dish is rich in nutrients and at the same time satisfying. It is considered suitable for fasting days or even for those who avoid meat. Try this delicious recipe and enhance it with one of our spreads for greater enjoyment.

Execution Method

We preheat our oven to 200°C.

We wash our potatoes well and cut them in cubes.

We clean the mushrooms and cut them into slices.

Then, we finely chopped the onion and the garlics.

In a large bowl, we combine the potatoes, the mushrooms, the onion, and the garlic.

We drizzle the vegetables with olive oil.

We sprinkle with dried thyme and rosemary.

We season well with salt and pepper. 

We toss everything to coat evenly.

We spread the seasoned vegetables in a single layer on a baking sheet.

We roast in the preheated oven for about 30-40 minutes or until the potatoes are golden brown and tender. 

We stir the vegetables halfway through the cooking time for even roasting.

When they are done, we remove them from the oven and garnish with fresh chopped parsley if we want.

Tips

We never wash the mushrooms because they absorb moisture and "water" the food. If we want, clean them slightly with a wet paper towel.
