Tourlou or Briam
Tourlou, also known as Briam, is a delicious Greek dish featuring a medley of roasted vegetables. Rooted in monastic traditions, this dish elegantly combines sliced potatoes, zucchini, eggplants, bell peppers, tomatoes, and red onions in a harmonious medley. Infused with the aromatic essence of minced garlic, extra virgin olive oil, dried oregano, and dried thyme, the vegetables are meticulously layered and roasted to perfection. This wholesome creation, seasoned with care, transcends culinary boundaries, embodying the essence of mindful fasting and Greek monastic culinary tradition.
We preheat our oven to 190°C.
We peel and slice the potatoes, the zucchini, eggplants, bell peppers, tomatoes, and red onion.
In a large baking dish, we layer the sliced vegetables, alternating them to create an even mixture.
We sprinkle the minced garlic over the vegetables.
Then, we drizzle with extra virgin olive oil over the vegetables.
We season with dried oregano, dried thyme, salt, and pepper.
We toss the vegetables to ensure they are coated evenly with the olive oil and seasonings.
Then, we cover the baking dish with aluminum foil and we bake in the preheated oven for about 45-50 minutes.
We uncover the dish and continue baking for an additional 15-20 minutes or until the vegetables are tender and lightly browned.
Once our food is done, we remove it from the oven and garnish with fresh chopped parsley.
It is not necessary to place the vegetables in a specific order. We can put them however we want.
