Chickpeas in the oven
Monastery baked chickpeas is a fasting, lemony, nutritious dish worth trying. In Mount Athos, baked foods like this one are made in traditional wood-fired oven, which gives an extra taste to the food. Make this easy monastic recipe even in the electric oven and you will have a delicious stewed meal.
We let the chickpeas soak overnight.
The next day, we transfer the chickpeas to an oven dish, preferably clay.
We cover them with water and let them cook for about two hours, until they start to soften.
We check from time to time whether we need to add some water.
We put the oil in a pot and saute the onions with the carrots.
We open the oven and add the contents of the pot to the pan, as well as all the other ingredients except the lemon.
We bake for about another hour and adjust the salt if needed.
When we take the food out of the oven, we add the lemon juice.
If we have leftover boiled chickpeas from another meal, we can use them and reduce the baking time in the oven.
