Artichokes stew
On the fasting days of Mount Athos, we find solace in the simplicity of artichokes stew. This simple yet satisfying dish honors our tradition of mindful eating and at the same time sustains us on our spiritual journey. You should try this dish and be amazed by its unique taste. We trim the tough outer leaves of the artichokes until we reach the more tender inner leaves.
We cut off the top third of each artichoke and trim the stems.
We slice the artichokes in half and we remove the fuzzy choke if present.
In a large pot, we heat the olive oil in a medium heat.
At the same time, we copped the onions and the garlic.
We add them into a pot and sautéing them until they are softened.
Then, we pour in the diced tomatoes with their juice and we stir well.
We add the dried oregano and the dried thyme.
We season well with salt and pepper.
We pour in the fasting-compliant vegetable broth and bring the mixture to a simmer.
Then, we place the prepared artichokes into the simmering stew.
We cover the pot and let the stew simmer for about 30-40 minutes or until the artichokes are tender.
We make adjustment to the seasoning as needed.
We serve the artichoke stew warm, with lemon wedges on the side for a fresh citrusy kick.
Cooking time can vary depending on factors such as the size of the artichokes and the specific simmering conditions. So, we should check periodically.
If we want we can add carrots or peas to make it more enriched.
Also, instead of red, we can do it with lemon. We just skip the tomato and add lemon juice.
