Artichokes a la polita

We wash the artichokes and leave them whole.
We put water with salt in a bowl and put the artichokes in it and rub them with lemon.
At the same time, we clean the onions and cut them slightly crosswise.
We clean the potatoes well.
Then, we clean the carrots and cut them into 4 pieces.
We pour water into a pot.
When it boils, we add our vegetables along with the dill.
When they are about to boil, we add oil, lemon and salt.
At the same time, in a small bowl, we put some cold water and flour.
We mix well until it becomes a paste.
Slowly we pour juice from the artichokes into the porridge, to dilute it even more.
When our porridge is diluted further, we pour it little by little into the pot with the vegetables.
We shake the pot well so it goes everywhere.
We leave the food until the sauce thickens well.
We add pepper and remove the pot from the heat.
When cooking artichokes, it is best to have the stem facing upwards.
Instead of adding flour, we can cover the food with an aluminum foil until only its oil remains.
