Velvety vegetable soup without olive oil
During fasting periods, monks relish velvety vegetable soup prepared without olive oil. This comforting dish provides simplicity and nourishment to Orthodox monks, maintaining their adherence to dietary guidelines. Despite the absence of olive oil, the soup boasts richness and flavor, fulfilling their dietary needs. Give this simple recipe a try and experience its delightful taste. We wash all the vegetables and chop them.
We place them in a pot of water and let them simmer until soft.
We transfer the vegetables little by little to the blender along with some of the broth and melt them.
We pour the melted vegetables back into the pot, season with salt and pepper and let the food come to a boil.
We dissolve the corn flour in some cold broth from the soup and pour it into the pot.
We let the food boil one last time until it becomes pure.
The grinding process becomes much simpler if we have a "rhabdoblender" device because we grind directly in the pot.
