Velvet soup with red peppers
An easy, quick and delicious recipe from Mount Athos for velvet soup with red peppers. Orthodox monks often cook food with vegetables as it provides them with the right vitamins to have energy. Try this fasting recipe step by step and be surprised by its unique taste.
We wash our vegetables.
We peel our carrots.
In a blender, we add the onions and carrots.
We beat well until they are mashed.
In a pot, we put some olive oil.
We pour in the pulp we have made.
We salt well.
We mix.
Then, we add the garlic and red peppers.
We mix well.
We season with salt and pepper.
We let the food simmer for 15-20 minutes.
We also mash our ingredients with a hand blender.
It would be good before we put our vegetables in the blender to cut them.
If we don't have a blender, we can also put these vegetables in the blender, and just before putting them in the pot, add some juice from the pot.
If we want, we can also use vegetable broth for a stronger taste.
