Tomato soup
In the monastic kitchen, tomato soup is a beloved dish enjoyed during fasting periods. This simple yet flavorful soup, offers a comforting option that respects monks dietary restrictions. With its rich and tangy flavor, tomato soup provides a nourishing and satisfying meal for monks abstaining from certain foods. You can accompany your soup with a piece of bread from Mount Athos.
We peel the tomatoes, remove their seeds and cut them in pieces.
We puree the tomatoes in the blender.
We add the olive oil to a pan and saute the onions with the garlic.
We pour the juice from the tomatoes into the pot and let it boil over low heat for about 5 minutes.
We add paprika, ketchup and lemon juice.
We add about 3 cups of water and season with salt and pepper.
We let the soup simmer for 20 minutes and adjust the salt if necessary.
If we don't have fresh tomatoes, we can use a can of peeled tomatoes.
