Octopus soup

We remove the tooth and eyes from the octopus, wash it well and simmer it until soft.
We chopped the octopus and keep the juice in which it was boiled for later.
We put the olive oil in a pan and saute the onion with the garlic.
Then, we add the puree and dill.
We pour the reserved broth into the pot and add a little more water if necessary.
We season with salt and pepper, add the octopus and let it boil.
We add the rice and simmer until soft.
We remove the pot from the heat and add a little vinegar.
The cooking time of the octopus depends on how tough the octopus is.
If we don't have rice, we can add some orzo.
