Fish soup from Mount Athos

Our fish soup is meticulously prepared using freshly caught fish from the nearby waters, adding to its exceptional taste. We clean the fish and wash them well.
We peel the potatoes, carrots, onions and remove the seeds from the peppers.
We put the fish, the celery and the cleaned vegetables into a pan chopped.
We add 1,5 liters of water to the pot and simmer until the vegetables are soft.
We remove the fish from the pot and keep aside for later.
We add the olive oil, parsley, lemon and season with salt and pepper.
We let them to a boil and add the rice.
We let the food boil on a low heat for another 10 minutes and add the fish.
If we want our soup to be veloute we can grind the vegetables before adding the rice and fish.
