Fasting pumpkin soup
Fasting pumpkin soup is an ideal choice for fasting periods, especially here on Mount Athos. This nourishing soup provides warmth and sustenance while adhering to dietary restrictions. Rich in flavor and satisfaction, this pumpkin soup is a delightful option for those observing fasting rituals. Give it a try and experience its comforting goodness. For an extra touch, consider pairing it with a slice of herb bread to complement the flavors.
We put the olive oil in a pot and sauté the onions.
Then, we successively sauté the pumpkin and the potatoes and add the cumin.
We pour the water into the pot until the ingredients are covered and season with salt and pepper.
We let the soup simmer for about 20 minutes, stirring regularly.
We remove the pot from the heat and add the parsley.
We grind in the blender little by little the vegetables together with some of the stock and then put them back into the pot.
We adjust the salt if necessary.
If we want we can serve with a few homemade croutons or dried pumpkin seeds.
The grinding process becomes much simpler if we have a "rhabdoblender" device because we grind directly in the pot.
