Stuffed squid
Stuffed squid is a delicious and fasting dish that monks often make during fasting. Squids are rich in proteins, which are essential for the body of monks who never eat meat. Try this recipe from Mount Athos for stuffed squid and accompany them with a nice fresh salad.
We clean and wash our squids well.
We remove the mouth and eyes.
We cut the tentacles and the rest, except for the bag from which we remove the outer skin.
At the same time, we grate the onions.
We heat oil in a pan and add the onions.
We add salt and the tentacles.
When they are done, we add the chopped dill, rice and pepper.
We mix well.
Then, we put water to boil.
We leave our filling to be done.
We fill our squids with the help of a teaspoon.
Then, we close the open part with a toothpick.
At the same time, we have made a simple tomato sauce in a pot.
We place the stuffed squid next to each other.
We add some hot water.
We cook them over low heat.
When they drink their liquids, we add a little olive oil.
We take the pot off the stove and wait for them to cool down a bit.
We remove the toothpicks.
We place them on a plate and pour the remaining juice/sauce on top.

It would be good not to use tripe because they don't boil.
