Squid with greens
Squid with greens is a delicious and nutritious recipe that the monks usually make here in Mount Athos during fasting days. Squid or calamari is a food that could not be missing from our recipes as it is rich in proteins, which are essential for our body because we never eat meat. Try this unique recipe step by step and be amazed by its incredible taste.
We clean the squids (remove the eyes, mouth and backbone).
We wash them well.
We boil them well on a low heat, without pouring water because they lower their own.
If necessary, we add a little boiling water.
When they boil, we withdraw.
At the same time, we cut the onions into thick pieces.
We save them.
We cut the garlic into thick pieces and throw them in as well.
Then, we add the squids with their juice.
We cut the dill into medium size and add it.
At the same time, while we wait for the squid to boil, we have boiled our greens.
We drain them well.
We also add these to the squid.
We add the lemon juice and pepper.
We let them boil until the liquids are saved.
We can use either fresh or frozen squid or even canned squid.
We can also add tomato if we want.
