Skewered mussels
Mussels are often served in the trapeza of the monasteries of Mount Athos due to their high nutritional value. In addition to the necessary proteins they provide, mussels are also very low in fat, without burdening the health of the monks. Try this heathy recipe for fried mussel skewers and you will have a healthy, protein-rich snack for fasting days, easily and quickly.
We wash and clean the mussels very well by scrubbing their shell with a brush and removing their whiskers.
We put the mussels to steam for 1-2 minutes in a pot of water.
We throw away any mussels that did not open during steaming.
We remove the shells from the mussels, so that only the crumbs remain.
Then, we mix the flour with a little water and a little salt to make a thick paste.
We place 6-7 mussels on each stick, depending on their size.
Meanwhile, we let the oil burn in a deep pan.
We dip each skewer into the porridge and immediately after that we drop it into the hot oil until it turns golden brown.
We leave the skewers in absorbent paper to remove excess oil.
We sprinkle them with some red pepper and serve with some garlic dip.
The porridge should not be too thin because it will not stand on the mussels.
The recipe can be made much easier with ready-made frozen mussel crumbs.
