Fasting mayonnaise
Fasting mayonnaise is a versatile condiment cherished by the Orthodox monks here on Mount Athos, especially during periods of abstinence. This fasting dip/spread crafted with vegetarian-friendly ingredients and for those observing fasting practices. Ideal for enhancing the flavor of various dishes, fasting mayonnaise exemplifies the resourcefulness and culinary traditions of Mount Athos, providing a quick and flavorful option that caters to dietary restrictions while satisfying the palate. You can accompany it with your favorite fish in the days when it is allowed.
We put 1 1/2 cups of water to boil in a saucepan while dissolving the flour in the other half cup of water.
We pour it into the boiling water.
We stir continuously until the cream thickens. Be careful not to lump.
We remove from the heat.
We leave to cool (about 30 minutes).
We put it in the blender and add vinegar, lemon juice, sugar, mustard and salt.
We add the oil slowly.
We beat the cream on medium speed until all the ingredients are combined.
We can keep it for several days in the refrigerator in a well-closed glass jar. Be careful, as long as it is in the fridge it will harden/thicken.
