Sweet pie with zucchini
Sweet pie with zucchini is a delightful treat enjoyed by Orthodox monks, especially during fasting periods. This simple yet delicious pie offers a comforting indulgence while adhering to dietary restrictions. This sweet pie from Mount Athos provides a satisfying option for monks observing fasting rituals. First we wash and clean the zucchini and then grate them on the coarse side of a grater.
We place them in a strainer, sprinkle with a little salt and leave them for a few minutes to extract as much liquid as possible. At the end we squeeze them with our hands.
Then, we add the semolina, sugar, olive oil, walnuts, cinnamon to the zucchini and mix very well.
We place about 3 leaves on a greased tray and grease them one by one.
Then, we sprinkle each of the next 3-4 leaves with a little filling.
Finally, we lay the last 3 leaves and sprinkle them with a little water so that they don't stand out from each other.
We dawn the pie, sprinkle with olive oil and bake at 180 degrees for about 1 hour until the sheet turns golden.
We leave the puff pastry out of the refrigerator for at least 2 hours before using it, so that it thaws completely.
We can serve sprinkle with a little powder sugar and cinnamon.
