No-phyllo mushroom pie
No-phyllo mushroom pie is a delectable and simple recipe often prepared by Orthodox monks. The nutritious mushrooms enclosed within the pie offer the monks the energy they require during fasting periods. Follow this step-by-step recipe from Mount Athos to experience the savory delight of this pie.
We put the olive oil in a pan and saute the mushrooms on high heat for 3-4 minutes, so that they dry very well.
In another bowl, we beat the eggs well and then add the milk, yogurt, seed oil and mix well with a whisk.
Then, we add the flour and baking powder, sprinkling them slowly and stirring constantly.
Finally, we add the cooled mushrooms and all the other ingredients (except the kefalotiri) and mix.
We grease a pan well, pour the mixture in, spread it well and sprinkle with the kefalotiri.
We bake the pie in a preheated oven at 200 degrees for about an hour until it takes on color and its surface becomes crusty.
For a better result, first we sift the flour.
