Greek cabbage with rice-Lahanorizo
Cabbage rice is a beloved and flavorful traditional dish crafted by the Orthodox monks here on Mount Athos. This nourishing food is particularly suited for fasting days, providing the monks with essential proteins to sustain their strength. We clean the stems and the outer leaves.
We cut the cabbage into large pieces.
We pour it into boiling water and boil it with a little celery until soft.
We sauté our coarsely chopped onions with salt.
We add the tomato, paste and paprika.
We drain the cabbage and celery well and add them to the sauce.
When they boil, we add our rice.
When the rice is done, we serve our food hot.
It would be good to dilute the tomato paste with a little warm water.
It is important not to absorb all the liquid, so that when we put the rice in it can cook in the sauce and be tastier.
