We drain and rinse the chickpeas.
We chopped the mixed vegetables and the garlic.
We heat olive oil in a pan over medium heat.
We add the garlic and sauté for 1-2 minutes until fragrant.
We add the mixed vegetables and stir-fry until they are tender-crisp.
Then, we add the chickpeas, the ground cumin, the paprika, the salt, and the pepper.
We stir well to combine.
We cook for an additional 5-7 minutes until everything is heated through.
We squeeze fresh lemon juice over the stir-fry before serving.
We could garnish with chopped fresh parsley if we desired.
