Beans with mushrooms
Beans with mushrooms is a beloved dish among the Orthodox monks here on Mount Athos. They enjoy this dish during fasting periods for its hearty and nutritious qualities. We boil our beans for a while.
We strain them.
We boil them again in a little water.
At the same time, we grate our onions and cut the mushrooms into thick pieces.
We lightly sauté the onions, mushrooms and 2-3 cherry tomatoes with oil and salt.
We add them to the beans.
We add the tomato paste and oregano.
We add the pepper.
When they soften, we remove from the heat.
We can also make them white, we just add lemon juice instead of tomato paste.
If we want, we can not put cherry tomatoes.
If we are fasting from oil, we replace it with tahini.
If we want, we can put black pepper, red hot pepper or chili flakes instead.
