Lenten smiles
Lenten "smiles" are a Greek traditional recipe that we make during Lent. The "smiles" are a side dish for the oily fake soups of Great Lent. Try this recipe from Mount Athos and be suprised not only by its unique taste but also how easy its is to make this snack.
We knead all the ingredients until a firm dough is formed, without sticking to our hands.
We let the dough rest for about 30 minutes.
We chop the tomatoes (without the juices, seeds and skins).
We chop the olives, dill, parsley, spring onions and capers.
We have baked the potato, peeled and mashed it.
We mix all the ingredients for the filling.
We shape the dough into small balls and open them with the palm of your hand.
We fill the dough and press on the sides to close the pie like a smile.
Then, we place half a slice of tomato on each.
We bake for 45-50 minutes at 180 degrees.
As soon as they turn golden, we take them out.
On days of catalysis, we can also add 1 tbsp. oil, feta cheese and a piece of butter on top of each roll.
