Fry whitebait
Fry whitebait is a valuable fish because of their enormous nutritional value. Thus, we find it very often in the monks diet. An easy monastic recipe to make fried whitebait. A delicious summer dish from Mount Athos for the days when eating fish is allowed in the holy calendar. Don't forget to accompany it with a refreshing salad or even with one or our spreads, such as tahini or taramosalata.
We wash our whitebait well.
We squeeze the belly a little and pull out the intestines.
We flour them and fry them in a lot of oil and on high heat.
We salt them after frying.
We serve them warm.
The taller and blacker our whitebaits are, the better.
Be careful, we wash them but we don't scrape them, we don't clean them and we don't salt them before frying them.
