Baked sardines with potatoes
On many Sundays, fish is served in the refectory of the monasteries, since meat is completely absent from the monks diet. Here is a authentic recipe for baked sardines with potatoes. It is an easy, nutritious and fasting food that monks usually make during fasting where it is allowed the consumption of fish. Try this wonderful recipe from Mount Athos and be surprised by its deliciousness.
We clean the potatoes and cut them into 4 pieces.
We put them in a pan.
We add the garlic, oregano, lemon juice and olive oil to the pan.
We season with pepper.
We mix well.
We pour about 1 glass of water.
We bake in a preheated oven at 180 degrees on the resistances and in the air for about 40 minutes.
At the same time, we clean the sardines.
We wash them with plenty of water and leave them in the colander.
We sprinkle them with salt and put them in the fridge until the potatoes are done.
When the potatoes are ready, we place the sardines one on top of the other on the potatoes.
We bake for another 15 minutes.
When we clean the sardines, with a knife we cut the head and pull with a sharp movement to remove the entrails. We scrape the skin to remove the scales.
If we don't want to do this process, we buy cleaned sardines.
