Tomatokeftedes (Tomato meatballs)
Here in Mount Athos the monks tend to make tomato meatballs as it is an easy and simple fasting recipe that everyone can make. Try the following recipe from orthodox monks and accompany them with garlic sauce or with Greek tzatziki sauce.
We peel the tomatoes and squeeze them well to remove the liquid and seeds.
We chop them.
We grate the courgettes and squeeze them well with a little salt.
We grate the onions and garlic.
We chop the parsley.
We mix everything in a bowl together with the flour and yeast.
We leave a little for the dough to set.
We form with soft flour.
We fry on low heat until they get color on the outside.
If we want to make our recipe healthier, we can bake them in the oven instead of frying them.
Portions may vary, depending on the size of the tomato meatballs.
