Lentil meatballs
On Mount Athos, the Orthodox monks exemplify mindful consumption by repurposing leftover food, as seen in their innovative approach to creating fasting lentil meatballs. If you appreciate the versatility of lentils, this easy and quick recipe is a must-try, promising a delightful culinary experience. These lentil meatballs can be paired with a refreshing salad or one of the savory sauces and ointments crafted by the monks, showcasing the resourcefulness and creativity that define the culinary traditions of Mount Athos.
We puree the leftover lentils in the blender.
We add a teaspoon of salt and flour.
We mix well.
If necessary, we add more flour until our porridge becomes thick.
We fry in hot oil, taking spoonful's of our mixture.
After they are browned on all sides, we put them on absorbent paper.
If we want them to be healthier, we can bake them in the oven instead of frying them.
We can also sprinkle them with some chopped parsley.
The amount may vary depending on how big we make our meatballs.
