Potato salad from Mount Athos is an easy, delicious and quick recipe that Orthodox monks make during Lent. They prefer it as the vegetables contained in them give the right energy to continue the day. Try this delicious and easy recipe and be amazed by its taste.

Ingredients
Execution Method

We boil the diced potatoes in a pot of salted water until soft, 10-12 minutes.

We drain and let cool slightly.

At the same time, we chop the onion and parsley.

We cut the cucumber into cubes and the olives into slices.

In a large bowl, we mix the cooked potatoes, onion, cucumber, olives and parsley.

In a small bowl, we whisk the olive oil, lemon juice, oregano, salt and pepper to make the sauce.

We pour the sauce over the potato mixture and mix to cover all the ingredients.

We taste and adjust the salt and pepper if necessary.

Tips

If we are not fasting, we can add mayonnaise or even chopped boiled eggs to our potato salad.
