Revani (Greek semolina cake)
Ravani is a Greek traditional syrupy pan sweet that is particularly popular. Make this delicious recipe from Mount Athos for yourself and be surprised by how fluffy and tasty it is.
We start with the syrup so that it has time to cool. We boil the water with the sugar and cinnamon sticks for about 5 minutes.
We beat the eggs with the sugar with a mixer until the mixture becomes white.
Then, we add the butter and after the semolina, the flour, the soda, the zest and beat them all together.
We spread the mixture in an oiled pan and bake at 180 degrees for about 50 minutes.
As soon as it turns brown, we take it out of the oven and pour the syrup over it.
We leave the revani for at least 4 hours before serving so that the syrup is well absorbed.
We can if we want to serve with some coconut.
