We pour the egg whites into a bowl and beat well with the mixer.
We add the nuts, breadcrumbs, sugar, nutmeg, cinnamon to the bowl and mix well.
We take a small amount of the kataifi leaf, open it, fluff it and spread it in an oblong shape.
We put about a spoonful of filling and roll it up.
We repeat by making all the rolls and put them in a buttered pan close to each other.
We sprinkle the rolls with a little water and pour the hot butter over them.
We bake at 180 degrees for about 45 minutes until golden.
We take the rolls out of the oven and let them cool.
In a pot, we boil water with sugar, cinnamon and lemon for a few minutes. We remove from the heat and add the honey.
We pour the hot syrup into the rolls and cover them.
The same recipe, in addition to individuals rolls, can also be made as a single pan dessert by placing half the sheets on the bottom, spreading the filling and covering with the remaining half sheets.
The recipe can also be made with crust sheets, laying 2-3 sheets on the bottom, spreading the filling and covering with another 2-3 crust sheets.
