Greek honey dumplings/ Loukoumades
During fasting periods, monks delight in savoring Greek honey dumplings, also known as Loukoumades, as a special treat that respects their dietary restrictions. These fluffy and golden-brown delights, deep-fried to perfection and drizzled with sweet honey syrup, offer a comforting indulgence while adhering to fasting traditions.
We start with the syrup so that it has time to cool. We boil the water with sugar and cinnamon for about 10 minutes, then we remove from the heat and add the honey.
We mix the flour with the salt in a large bowl and successively add the lemon juice, orange juice and water.
We mix well until it becomes a thick paste.
We put olive oil for frying in a deep pot and heat it.
We dip our left palm into the porridge and clench our fist so that a quantity of porridge rises up.
We take this amount with a wet spoon and drop it into the hot oil.
We frying the dumplings until golden and let them drain on absorbent paper.
We put them on a plate and pour the cold syrup over them.
We serve with some grated walnuts and some cinnamon.
The spoon with which we take the porridge must always be wet in order for the porridge to come off.
If we do not want to make syrup, we pour honey over the dumplings.
