Fasting truffles
Many desserts from Mount Athos are prepared with the aim of avoiding waste, and truffles are one such monastic recipe, in which surplus raw materials such as walnuts, breadcrumbs, etc. permanent deprivation. This monks recipe may be considered typically oil-free, but it contains plain chocolate, which in itself has a quite a lot of fat. So, it would be wiser to consume this specific sweet from Mount Athos on days of oil catalysis.
We boil the sugar and water for a few minutes to make the syrup.
We put all the ingredients, except the plain chocolate and cognac, in a large bowl and mix them well.
As soon as the syrup has cooled, we pour it into the bowl and mix until our mixture is formed.
We wet our hands slightly in the cognac and form small balls.
When we have formed all the truffles, we melt the plain chocolate in a bain-marie.
We take the truffles one by one with a fork and dip them in the chocolate.
Then, we leave them on a baking sheet until the chocolate hardens.
We transfer each truffle to the special paper case.
The truffles are kept in the refrigerator or freezer.
