Fasting rice pudding with tahini/ Rizogalo
Monks enjoy fasting rice pudding with tahini, called Rizogalo, during fasting. This creamy dessert, made with rice and tahini, is a comforting treat that follows their dietary rules. Its creamy texture and nutty flavor provide monks with a satisfying indulgence during fasting.
We simmer the rice in a saucepan, along with 1 liter of water.
We dissolve the corn flour in a cup of warm water and add it to the pot along with the lemon zest.
We dissolve the tahini and sugar in half a cup of warm water and add them to the pot.
We stir constantly to prevent the rice pudding from sticking to the pot.
Once the rice pudding has thickened, we divide into individuals bowls.
We serve with a little cinnamon.
We let the individual rice puddings cool to room temperature and then put them in the fridge.
