Fasting cake with cherry jam
During fasting periods, monks relish the simplicity and sweetness of fasting cake with cherry jam. We put the butter and sugar in a bowl and beat them with the mixer.
We add lemon zest, baking powder and little by little the flour while continuing to beat.
We divide the dough into two pieces and place one piece in a buttered pan, crushing it with our hands.
We spread he jam on the crumble dough.
We add the almonds to the second piece of dough, and cover with this cake, crumbling in the same way.
We bake in a preheated oven at 200 degrees for about 1 hour.
We serve with a little powdered sugar.
Of course, if we do not have cherry jam we can use any other jam.
