Fanouropita (Greek fasting cake)
Fanouropita, a traditional Greek fasting cake, holds a special place in the hearts of many during periods of abstinence. This simple yet flavorful dessert, made with ingredients adhering to fasting rules, symbolizes hope and gratitude in Greek Orthodox tradition. The act of baking and sharing this cake is believed to invoke the intercession of Saint Fanourios, bringing blessings and guidance to those who partake in its consumption.
We dissolve the soda and baking powder in a little of the orange juice.
We put the olive oil, orange juice, water, sugar in a bowl and beat them with a whisk until the sugar dissolves.
We add the mixture with the soda, cinnamon and cloves to the bowl and homogenize.
We slowly incorporate the flour, mixing gently.
We sprinkle an oiled pan with sesame seeds and pour the mixture inside.
We sprinkle again with the sesame and almonds and bake at 180 degrees in a preheated oven for about 50 minutes.
When the fanouropita has cooled, cut it into 40 small pieces according to tradition.
We serve with a little powdered sugar.
The dough should not be too firm but like a porridge.
