Diples, traditional Greek honey rolls, hold a special place in the hearts of monks during festive celebrations. These delicate pastries with sweet honey syrup are a symbol of indulgence and joy. Monks often prepare Diples during special occasions and religious festivals, sharing them with fellow monks and visitors as a gesture of hospitality and camaraderie.

Execution Method

We start with the syrup. We put the sugar, water, honey, cinnamon in a pot and let them boil for a few minutes.

We continue with the mixture for the garnish. We put the almonds, walnuts, cinnamon, sesame in a bowl and mix them well.

We put all the dough ingredients in a bowl and slowly incorporate the flour until we have a firm dough.

We let the dough rest for at least 30 minutes.

We lightly flour the workbench and roll out the dough into sheets. We cut it into rectangles of approximately 5x12 cm.

We press each rectangle in the middle to create a bow. We repeat.

We place in a frying pan or a fryer olive oil on medium heat and let it heat up well.

We throw in the diples one by one and fry them until they puff up and take on color.

We let the diples drain for a while on adsorbent kitchen paper.

We dip them in the syrup for a few seconds and put them on a plate.

We sprinkle the diples with the garnish mixture.

Tips

The ash for the lye must come from burning only nature wood.
