Cookies with Chios mastic and tahini
During fasting, monks find comfort in enjoying cookies made with Chios mastic and tahini, honoring their dietary practices. These special treats, flavored with the distinct aroma of Chios mastic offer a satisfying indulgence while adhering to fasting traditions. The blend of fragrant mastic and creamy tahini creates a uniquely sweet flavor that brings joy to their fasting routine.
We put the sugar and tahini in a bowl and beat them with a mixer until the mixture turns white.
We add the herbal cream, the retsina and continue beating.
We add the vanilla, chios mastic, baking powder and gradually the flour.
We knead until the dough comes away from our hands and form cookies in the shape of our liking.
We place the cookies on a greased tray or on a parchment paper and bake at 160 degrees for about 20 minutes until golden.
We can replace the retsina with any white wine.
