We peel the quinces, cut them in half and remove the seeds.

We spread them on a tray.

We dissolve the sugar in the cognac and a little water and add the cinnamon.

We pour the mixture into the pan with the quinces.

We bake at 100 degrees until the quinces are soft.

We serve with a little sprinkled cinnamon.

Tips

We can accompany the quinces with some yogurt or some ice-cream.
