Homemade sour cherry juice
Homemade sour cherry juice is a cherished beverage on Mount Athos, renowned for its simplicity and exquisite taste. We rinse the sour cherries well and remove their pits.
In a pot, we mix the sour cherries and the water.
We open the fire on medium heat.
After it boils, we lower the heat and let it simmer for about 10-15 minutes or until the cherries are soft.
We remove the pot from the heat.
We let the mixture cool slightly.
We strain the mixture through a fine mesh sieve into a jug to remove the cherry solids.
We press the cherries well to extract as much juice as possible.
We stir the sugar until it dissolves.
We put the juice in a bottle or jug in the fridge.
For a more intense taste, we can put in our glass 1 tbsp. sour cherry spoon sweet and then pour our sour cheery juice.
The sugar is adjusted according to how sweet we want it.
We can also accompany our sour cream with a leaf of spearmint.
