During fasting, lentil soup is a go-to dish for many. It is a hearty and nutritious dish which making it a perfect choice for those observing fasting rituals and especially for orthodox monks, where meat is absent from their diet. Try this recipe from Mount Athos and you will be surprised.

Ingredients
Execution Method

We rinse the lentils and place them in a pot of cold water.

We put them on the fire and as soon as they boil, we change the water.

We put them back on the fire and let them boil for 10 minutes.

When they are ready, we drain them and set them aside.

We put some olive oil in the same pan and sauté the onion and garlic.

We add the water to the pot and let it boil.

We add the paste, bay leaves, dill, lentils and the rest of the olive oil.

We let the food on a low heat for about 20 minutes until it becomes pure.

We salt for 5 minutes before turning it off so that the lentils don't harden.

At the end, we season with oregano and pepper.

Tips

If we want, we serve with a little vinegar.

The cooking time depends on the size of the lentil and the legume itself.

We avoid mixing lentils from different bags because the cooking time may differ.
