Fasting Greek Apple Pie with tahini

We put the tahini in a bowl and mix constantly adding the orange juice little by little.
Then, we add the flour, sugar, cognac, brandy and lemon zest and knead well.
If the dough comes out too dry, we add a little more orange juice or a little water.
We peel the apples, rub them on a coarse grater and squeeze them to lose their liquid.
We mix the apples well with all the other filling ingredients.
We divide the dough in two and open each piece with a rolling pin.
We lay the first piece on an oiled and floured baking sheet and spread the filling on top so that it goes everywhere.
We cover the apple pie with the second sheet of dough and join the two sheets together.
If we don't have self-rising flour, we can use all-purpose flour with a little baking powder.
