Spanakopita is an easy, delicious and traditional Greek dish that orthodox monks use to make. In this recipe, the spinach pie is fasting, as it does not include butter, cheese or eggs. Try this alternative recipe from Mount Athos and learn all the secrets for a sure success.

We wash the spinach well and chop it finely.

We season with salt.

After a while we grind it well.

We finely chop the dill and onions and add them to the mixture.

We add some pepper.

We mix well.

We grease the pan with oil.

We lay out the first five sheets.

We oil them one by one.

We empty the filling and spread it out.

Then, we put the other five leaves and oil them one by one.

We wrap the edges around the pan, after lifting the pie a little and with a knife cut the leaves all the way down while holding them with the other hand.

We sprinkle some cold water over the leaves to prevent them from sticking.

We bake in a preheated oven until golden brown.

Tips

When we lay the first five sheets, we do not stretch them completely, but leave them with folds.

The cooking time varies from oven to oven, so we must check our pie regularly.
