It reveals a deep red color and a commanding character. On the nose, an ethereal bouquet of ripe fruits like plums and berries unfolds, along with violet blossoms, hints of licorice and pepper, and subtle notes of vanilla and oak. On the palate, it offers a structured body, supported by firm yet ripe tannins and balanced acidity, leading to a long and complex finish.
Produced from organically cultivated Cabernet Sauvignon (80%) and Limnio (20%) grapes, each variety is vinified separately without added yeasts or processing aids.
Fermentation takes place in 5-ton wooden tanks using the piégeage method, followed by malolactic fermentation in oak barrels. The wine matures for 18 to 24 months in 300L French oak barrels from top coopers, then rests in the bottle for at least another 12 months before release.
Naturally rich in polyphenols such as resveratrol, this wine offers not only deep enjoyment but also compounds studied for their antioxidant and heart-protective properties.
Serving suggestion:
Best enjoyed at 16–18°C, paired with dishes such as roasted beef or lamb, aged cheeses, traditional sausages, moussaka, or even dark chocolate. A ritual in a glass — for moments worth remembering.
